Big Batch Panfakes
Serves: 4-6
  • 12 eggs
  • 1 cup flax meal
  • 1 cup plain Greek yogurt
  • 3 tsp baking powder
  • ½ tsp of salt
  • 1-2 tsp of vanilla
  • 4 packets of Sweet Leaf Stevia (or more to taste)
  • 1½ tsp cinnamon
  1. Spray griddle lightly with Pam just at the beginning (no need to spray in between batches) and using 1 cup measuring cup, ladle onto griddle. Makes about 12 panfakes (8" diameter). Notes Store in freezer; thaw out for 30-60 seconds to eat.
  2. Make your own corn free baking powder: If your recipe calls for...1 tsp. of baking powder, add instead ½ tsp. cream of tartar and ¼ tsp. baking soda. 1½ tsp. of baking powder, add instead ¾ tsp. cream of tartar and ⅜ tsp. baking soda (1/4 plus ⅛ tsp.).
  3. To make a large batch of baking powder, mix ¼ cup starch (arrowroot) with ¼ cup of baking soda and ½ cup of cream of tartar. The starch is very important! Otherwise you get concrete. Keep in a sealed jar or Tupperware. 1 tsp. mix equals 1 tsp. baking powder.
