Baked Zuchini Casserole
  • 1 medium yellow zucchini
  • 1 medium green zucchini
  • 2-3 Tablespoons chopped onion
  • ¼ to ⅓ cup fresh pico
  • 3 eggs
  • ½ cup low fat cottage cheese
  • "Go to" seasoning or one of your choice
  1. Slice the zucchini and lightly sauté it with the chopped onions and pico until it's a little more tender and onions are transparent. Sprinkle the "go to" seasoning over veggies while you're sautéing.
  2. In a bowl beat the three eggs and combine with the cottage cheese.
  3. Put the veggies in a single layer in casserole dish. Pour the egg/cottage cheese mixture evenly over it.
  4. Bake at 400 for about 20 mins til it starts getting golden brown around edges.
