Baked Berries & Cream Stuff French Toast
  • Cream Mixture:
  • ½ c homemade cream cheese (in Extras category)
  • ½-1 c fresh strawberries
  • ⅓ c Xylitol
  • 2 oz Greek yogurt
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • Egg Mixture:
  • 3 large eggs
  • 3 oz Greek yogurt
  • ½ c water
  • ¼ c Xylitol
  • 2 tsp cinnamon
  1. Spritz baking pan with Coconut Cooking Spray.
  2. Lay 4 pieces of cloud bread in bottom of 8 X 8 Pan.
  3. Create cream mixture: Blend together in food processor, homemade cream cheese (recipe in files), Cup fresh strawberries, Xylitol, Greek Yogurt, pure vanilla extract and Cinnamon.
  4. Spoon the mixture on top of the cloud breads and spread evenly.
  5. Lay 4 pieces of cloud bread on top of the cream mixture.
  6. Egg mixture: Beat together eggs, Greek Yogurt, Water, Xylitol and Cinnamon.
  7. Pour egg mixture on top of the stuff cloud bread.
  8. Cover pan with aluminum foil and bake at 425 for 30 minutes.
  9. Remove from oven and let rest 10 minutes before cutting.
  10. Top with fresh berries.
