Asparagus Stir-Fry

Asparagus Stir-Fry
  • 1½ c. 2-inch lengths asparagus, cut diagonal
  • 1 med. onion, sliced
  • ½ c. thinly-sliced celery, cut diagonal
  • ¾ c. thinly-sliced mushrooms
  • 2 Tbs. liquid aminos or other approved "soy sauce"
  1. Spritz large skillet or wok with approved oil or broth.
  2. Heat over medium-high heat until very hot.
  3. Add asparagus and onions and stir-fry untilasparagus is almost fork-tender.
  4. Add celery and mushrooms and stir-fry over high heat until lightly sauteed.
  5. Mix in liquid aminos and immediately remove from heat.
  6. Serve alone or on top of cauliflower rice.
